(What we did this summer vacation, quick summary)
This year we headed up the Florida coast to Savannah and the Carolinas. While we explored every style of fried chicken, Carolina BBQ, and low-country specialty, we realized that to enjoy Southern Cuisine in America is to grapple with the legacy of the South itself.
Also picked up Edna Lewis’ “In Pursuit of Flavor”.
We respect every morsel of food that comes into our kitchen, and love to learn as much as we can about the various cultures and history that we pay homage to when preparing our dishes.
