Recipe, Fudgy Brownies

We use this recipe, borrowed from Thomas Keller. This recipe produces an insane amount of brownies.

(3 1/2 sheet pans) 

14 ½ oz.     All Purpose Flour

10 ½ oz.    Cocoa Powder

 3 lbs.        Unsalted Butter (softly melted; not clear, but pancake batter consistence) 

12        Eggs

3 lbs.        Sugar

1 oz.        Salt

2 tsps.        Vanilla Extract

1 lb.         Semi-Sweet Chocolate Chips 

  1. Sift flour and cocoa powder
  2. Whip eggs, sugar, salt and vanilla
  3. In 3 parts, alternately add flour and butter
  4. Fold in chocolate chips
  5. Lay batter out on greased ½ sheet tray
  6. Bake at 350
