Recipe, Red Beans & Brown Rice

Red Beans and Brown Rice

¾ cup brown rice

1 ¾ cup water or chicken stock

1 tea bag of black tea

In a medium sauce pot, bring liquid to boil.

 Add tea bag, remove from heat after 30 seconds

Throw tea bag away

Add rice, return to low heat, cook covered for 40 minutes

Red beans:

2 c of canned kidney beans with juice from can

¼ cup tomato paste

1tb chopped fresh garlic

1tsp chopped fresh oregano

1 pinch of red pepper flakes

1 tb olive oil

¼ cup chopped scallion

Sautee garlic till golden in olive oil, add all ingredients except scallions

Simmer on low for 10-20 minutes

Add scallions and serve over brown rice.
